Nai bai

Nai bai are adored for their stems. Their stems are famously so juicy, that they are sometimes called milk cabbage or cream bok choy.

They belong to the broad category of Chinese Bok choy and have a savoyed curly leaf shape with dark green pigments.

We’ve been searching for a dwarf Bok choy or Nai bai, for several years now, and we’ve tried a few varieties that never came to fruition. Either the seed germinated terribly, the seedlings were really uneven, and if they did make into the ground and planted, they’d bolt.  

This week we’re really happy to have harvested our first sucessful succession of beautiful dwarf Bok choy for you all. These beauties are compact enough to be eaten whole or sliced down the middle length ways, they look so beautiful on a plate.
