Collard greens

Collards are a fantastic, non heading form and member of the brassica family. They have been cultivated for at least two thousand years. Collards are wonderful eaten raw, and become more and more tender the longer they are cooked.

This week we are extra excited because we welcome Collards and Creasy Greens ~ two really important greens to the African, African American and African Diaspora. We couldn’t share our love of collards without introducing the academic, author and activist Michael Twitty.

The presentation below is an important lecture on the significance of Collards in the South. Its a fantastic, informative and moving lecture thats perfect to listen to while cooking.
